Books: "The Cheese Trap" by Dr. Neal Bernard MD


Dr. Neal Bernard MD has had a major influence on my nutrition studies. His latest book "The Cheese Trap" really depicts how seriously damaging Cheese is to the evolution of the human health crisis.  He poses this question below.... 


"Cheese—a high-fat, high-cholesterol, and high-sodium topping—is nearly everywhere, from K-12 school lunch rooms to elegant dinner parties. It even has its own aisle at the grocery store. Could steering clear from this product, one that’s a linchpin in the standard American diet, be the catalyst to weight loss, optimal health, and disease prevention?"

Personally, I cut cheese out of my daily nutrition 3 years ago and anytime I've tried to "splurge" I've not only gotten sick but develop weird cravings for foods I would never eat.  I think the combination of hormones, fat, lactose and mold in cheese is a deadly addictive combination.

Is eating cheese feeding your body positive nutrition or is cheese a very occasional pleasure food? 

Here's some info about how cheese is made:

Cheese is basically moldy milk.  Although not all Cheeses are exposed to mold; the others are exposed to chemicals. Those cheeses not made with mold are made by exposing Milk to rennens, which are made from an enzyme that comes from calves’ stomach linings, and acids which change the texture and curdle the milk. The liquid is drained off (whey) and the solids are preserved (cheese). 

Soft-ripened cheeses such as Brie and Camembert are made by allowing white Penicillium candida or P. camemberti mold to grow on the outside of a soft cheese for a few days or weeks. The mold forms a white crust and contributes to the smooth, runny, or gooey textures and more intense flavors of these aged cheeses. 

Goats' milk cheeses are often treated in a similar manner, sometimes with white molds (Chèvre-Boîte) and sometimes with blue. 

Blue-mold cheeses like Roquefort, Gorgonzola, and Stilton are produced by inoculating loosely pressed curds with Penicillium roqueforti or Penicillium glaucum molds. The mold grows within the cheese as it ages. These cheeses have distinct blue veins and, often, assertive flavors. Their texture can be soft or firm.   

Now, we know that most cheese is derived from milk and is either treated with chemicals or mold in order to be made. One of the biggest problems with cheese besides how it's made is what's in the milk that it's being made with. About one-quarter of cheese that's sold in America comes from cows treated with Bovine Growth Hormone (BGH). The FDA approved its use in 1995 despite findings from organizations like the National Institutes of Health and Physicians Commitee that revealed known health risks from consumption of cheese and dairy products.

Let's evaluate the positive attributes and the health risks of eating dairy: 

BENEFITS:

1. Vitamins:   

Dairy products, including cheese, provide vitamins A and D. Vitamin A maintains healthy vision, the immune system and red blood cell production. 

2. Minerals: 

Cheese also provides two important minerals, calcium and phosphorus, which support the growth and maintenance of healthy bones and teeth, and can lower your risk of developing osteoporosis. Calcium also plays a role in the health of your nervous system.

3. Protein: 

You need protein daily because protein is a part of every cell in your body. Cheese provides significant amounts of complete proteins, or all of the nine essential amino acids that you need for good health. Firm cheeses such as cheddar contain more protein than softer cheeses such as blue cheese. The human body only requires 46g for women and 56g for men of protein daily. 

4. Pleasure:

Cheese provides a delicious taste to most recipes. It makes most people very happy and it goes well with wine. 

HEALTH RISKS:

1. Cancer:

According to a study published in the "Journal of the National Cancer Institute," cheese and other dairy products may actually raise the risk of breast cancer. A study published in "Nutrition and Cancer" also came to the same conclusion. Other studies link cheese to lymphoid cancers and lung cancer. 

2. Digestive Diseases:

The Physicians Committee on Responsible Medicine warned in "The New York Times" that cheese can contribute to the development of colic, allergies and digestive problems. Past the age of 2 years old human beings don't produce enough of the enzyme lactase. 
If you do not have enough of the enzyme lactase in your gastrointestinal tract, you might have problems when you consume dairy products. Most people are told they  are lactose intolerant but the truth is that those who can consume dairy without a problem are lactose tolerant and the rest of the people are normal human beings. Aside from a little lactose, dairy can also cause some gut damage due to the way it inflames the gut lining. It’s one of the worst to cause and irritate leaky gut syndrome, which can lead to autoimmune disease and other health issues over time. Dairy consumption is known to cause issues such as bloating, constipation, diarrhea, or even long-term IBS. Many people who suffer from more serious disorders such as Crohn’s disease find that once they ditch dairy, healing naturally begins. 

3. Heart Attacks:

The Center for Science in the Public Interest warns that the consumption of cheese is giving heart attacks to many Americans because of its high-fat content.  


4. Cholesterol: 

Dairy and cheese can also contribute large amounts of fat, sodium and cholesterol to your diet. Between 15-30 percent of your daily calories should come from fat. The over consumption of dairy and cheese leads to too much fat or cholesterol which can cause you to gain weight, develop heart disease and develop certain cancers. The amount of fat in a cheese depends on the fat content of the milk that was used to make the cheese.  

5. Chronic Inflammation

Dairy is highly acidic, despite it containing high amounts of calcium that acts as an alkaline agent by nature. Milk is rich in natural acids that can cause calcium deposits to build up and potentially cause arthritis and long-term inflammation. It also doesn’t necessarily keep our bones strong as we once believed. Most plant-based foods do a much better job (such as chard, kale, almonds, figs) and don’t contribute to chronic inflammation.

Although cheese and dairy do have some beneficial attributes like vitamin A, calcium and phosphorus, it's quiet apparent that if we eat too much of it we are headed down the road to inflammation, cancer, heart diseases and many other digestive problems. 

There is no argument that cheese and dairy products are delicious but now that we know that the health risks far out way the benefits of eating dairy and cheese, how do we find the balance between feeding our body for optimum health while still enjoying the pleasures in food like dairy and cheese. 

Tips for balancing your nutrition:

1. Be honest with how much you're really eating dairy and cheese. Make it a special meal and something you will savor. Make it worth it and not just a habit. 

2. Buy from locally sourced farms who don't use hormones or chemicals in their dairy production 

3. Eat the real deal with full fat made from whole milks. The reduced fat, non fat or processed  versions of cheese are far worse for you than eating the full fat version because the processing to make it low fat or non fat adds more chemicals and health risks 

4. Use cheese alternatives like nutritional yeast or almond cheese which is healthy to give foods a cheese flavor for times you're eating for nutritional health and not pleasure 

5. Find ways to make your favorite cheese dishes without cheese so you can have them regularly and only occasionally with cheese. 

Being healthy means being aware and finding your balance in life and with food.  Knowing what our risks and benefits are with foods makes knowing what's pleasure food and nutritious foods easier. The more we know about nutrition the more our decision making about what we eat becomes an intellectual decision for our health and long term wellness. That's how to create a lifestyle you can live with!

Basil Turmeric Tonic

Basil Turmeric Tonic


1 Large Orange Juiced 

4 Large Basil Leaves

2 inches Turmeric Root Sliced

1/2 inch Ginger Root Sliced 

8 ounces Apple Cider Vinegar

8 ounces Hot Water 


Optional Sweeteners: 1 tablespoon Maple Syrup, Honey or Raw Coconut Sugar 


Servings: 4 


Squeeze Orange's Juice into 16 oz bottle and add 2 orange 1/4's to bottle. Add sliced Turmeric root, sliced Ginger root, basil, sweetener (optional), Apple Cider Vinegar and then hot water. Shake it up and place in fridge for a few hours until cool. Serve over ice or as a morning vitality shot!

Vegan Pizza Dough Recipe


Vegan Pizza Dough

Ingredients:

1 cup warm water

2 ½ teaspoons active dry yeast

1 tablespoon granulated coconut sugar

3 cups unbleached organic all-purpose flour 

1 teaspoon sea salt

2 teaspoons coconut oil 


Step 1: In a measuring cup, place warm water. The water should be warm to the touch making sure it's not too hot because hot water will kill the yeast; and water that is too cold will not activate it. Pour the yeast into the water, add sugar, and stir until both ingredients dissolve and a beige mixture results. Let stand for 5 minutes, until a thin layer of creamy foam covers surface, which indicates that the yeast is effective. Tip: If bubbles/foam have not formed within 5 minutes, start over with a new package of yeast 

Step 2: Combine 3 cups flour with sea salt in a large mixing bowl. Make a well in the center and pour in your yeast mixture and coconut oil. Using a spoon, stir flour into well, blending well to get rid of any lumps. Next, place dough onto a lightly floured surface. Dust your hands with flour and knead gently. Turn and repeat until the dough is silky and elastic (less than 5 minutes) Add a little Coconut oil to your hands if the dough is too dry. Tip:  if you knead too much it overdevelops the gluten in the flour and results in a tough crust.

Step 3: Form dough into a ball and lightly coat with coconut oil. (Less than a teaspoon) Place dough back in mixing bowl. Cover the bowl with plastic wrap and drape a kitchen cloth over top.

Let the dough rise in a place warm place (68 to 72 degrees) until it has doubled in size (about 1 to 2 hours).  When the dough is ready, punch it down using your fist, to eliminate the air bubbles. 

This recipe will make:

One (1) 15 to 16 inch pizza 

Divide dough in half;  
   two (2) 12 inch pizzas 
   two (2)  9 inch deep-dish pizzas

Divide dough into 4 to 6 equal portions. 
   Four (4) to six (6) 9 inch individuals            

Dough can be kept refrigerated for up to 36 hours or sealed and froze for up to a month. 

Tip: Let chilled dough come to room temperature before shaping.

Baking: Pre-heat oven to 500 degrees for 30 minutes prior to baking. Pizzas should take between 10-15 minutes to bake depending on thickness of the pizzas. Tip: lightly oil or spray dough with Spectrum Coconut oil cooking spray before baking to prevent burning the dough.

Ingredients tip:  The Unbleached organic flour can be replaced with any other type of flour that you want to use (quinoa flour, brown rice flour, chickpea flour) to accommodate your dietary needs. This recipe is a versatile vegan base recipe. You can add spices to the dough and make a Rosemary and Garlic crust. Use this base recipe to be creative and please your own taste buds while being as healthy as possible! 

You can make any type of vegan-pizza, flat breads and even bread bowls with this basic dough. If you entertain, have a big family to feed or meal plan, you can double the recipe and have the dough on hand!

Spicy Sweet Pickling Recipe


When you create the perfect pickling recipe for the win! 

Use a Mason Jar or old Pickle Jar

Add in this order:

1/2 cup Kosher Salt
1/2 cup Coconut Sugar
1 tsp Cinnamon (I use 1 tbsp, but I love cinnamon)
1/2 diced White Onion
1 Jalapeño Pepper Sliced
1 Serrano Pepper Sliced
1 Large Carrot Sliced
1 Large Cucumber Speared

Fill Jar with Distilled Vinegar (5% acidity)

Seal Jar tight! Shake and Roll the Jar until everything has intermingled. 

Place in refrigerator for 12hrs minimum.
 
This is a healthy spicy & sweet snack you can always have on hand! Yum!

Black Bean Dip Recipe


Black Bean Dip with Cucumbers, Yellow Peppers, Beets and Carrots! 

Black Bean Dip:

1 can Organic Black Beans (no salt, drain and wash)
1 tsp Chili Powder
1 tsp Cumin
1 tsp Garlic Powder
1 tsp Organic Ground Horseradish 
1 tbsp Fresh Thyme Leaves 

Blend in Food Processor or good old fashion elbow grease. 

Yum! 

Health Benefits:

1. Black Beans: 

The black bean's fiber, potassium, folate, vitamin B6 and phytonutrient content, coupled with its lack of cholesterol, all support heart health. The fiber in black beans helps lower the total amount of cholesterol in the blood and decrease the risk of heart disease.

3. Yellow Pepper:

3 Spicy Chili Recipes from One Vegan Base recipe

Raw Earth Medicine: 
3 Easy Spicy Chili Recipes one Vegan Base

Vegan Recipe Base: 
2 c Kidney Beans
2 c Cannellini Beans
2 c Black Beans
2 c Chickpeas (garbanzo beans)
1 c Chopped White Onion
1 c Chopped Basil
5 oz Tomato Paste
1 packet @simplyorganicfoods Spicy Chili (⬅️keep on hand. No GMO or chemicals)
16oz - Water/Low Sodium Vegetable stock
(Add more liquid for desired thickness)

Sauté Onions in pot to soften a little 
Add water/stock
Add tomato paste
Bring to a boil then add remaking ingredients including spice packet 
Simmer for 5 minutes and serve 
You can dress this recipe any way you like it. 

1. Vegan: top with basil and chopped peppers and serve over mung beans and black rice 

- low in fat and calories paired with mung beans and black rice which are one of the highest sources of protein! There are No GMO's or Chemicals in this dish. This is a perfect healthy meal with no negative attributes that you can eat in abundance. 


2. Vegetarian: top with basil, tomato and fresh mozzarella serve over brown rice or mung beans and black rice

 - Mozzarella adds lactose, chemicals from processing and fat to the dish which will mildly alter the calories and health benefits of the dish. A well balanced healthy meal.

Hickory Braised Beef Short Ribs (Bone-In) #beefboner

  Short Ribs

2 - 3 lbs short ribs bone-in - grass fed, no hormone beef
2 white onions
4 garlic cloves
8 oz Liquid Smoke Hickory (whole foods or any market)
16 ounces Low Sodium Vegetable Stock
12oz (1 bottle) - Ginger Tonic/Ginger Beer
Black Pepper
Cumin
(*optional - Pink Himalayan Sea Salt)

Prep time: 10 minutes
Bake time: 20 minutes
Braise time: 4 - 8 hours (to taste)

Prepare the meat:

Tenderize the meat;  I usually use a rolling pin to pound out the meat.  Then I rub both sides of the meat with black pepper, cumin and a drizzle of liquid smoke hickory.

Baking dish Prep: 

Line the bottom of the baking dish with one chopped onion and 2 diced garlic cloves

Place meat on top of onions and garlic 
Place 2nd chopped onion and two diced garlic cloves on top of the meat.

Pour 8 oz of liquid smoke hickory over the meat
Pour approx. 16 ounces of low sodium vegetable stock into the baking dish



Place in the fridge and marinate for 24 hours: if you can! I've prepared this with zero marinating time and I've also, marinated as long as 4 days with this recipe and it was unbelievable.  The longer you marinate the more delicious this is but it will still be delish with no marinating time.

Bake: 350 degrees for 20 minutes

Braise (boil) - 4-6 hours - 

Pour contents of baking dish into stew pot, add one bottle of Ginger Tonic/Ginger Beer and bring to a boil. Once its boiled for about 5 minutes bring down to a simmer. Let simmer for a minimum of 4 hours.  6 hours is pretty delicious but 8 hours is a flavor explosion in your mouth.  Keep an eye on the au ju level and stir every hour-ish.  

Remember: cooking is always to taste.  You may prefer the meat at 2 hours into braising where I prefer 8.  This recipe will definitely take the fear and questions out of how to make the perfect fall of the bone short rib.  It's easy to make and will impress any palette.  

Complimentary dishes: 
steamed rosemary asparagus and fingering potatoes, sweet hot cauliflower "mash potatoes", curried beets, vegetable soup (use the au ju from the ribs and add vegetables)

Food Combining Lesson:

I've taken a high fatty meat dish and used the bare bones of ingredients to highlight the flavor of the meat. Without a sugary sauce, added fats from oil or high salt content, the only portion of this meal that some may frown upon is the fat content in the meat but because I didn't add any ingredients thats digestion are slowed down by the digestion of fat or anything that can't be naturally digested, the body will receive all the positive benefits of consuming red meat and won't be affected by the negatives. When eating a high fat meal, keep your sugars and carbs low so that they aren't stored as fat while your body digests the fat and protein from the meat.  Eat high water content carbohydrates like asparagus, cucumber, zucchini, cauliflower and celery with this meal to further aid in digestion and distribution of nutrients, proteins and fats.

Benefits of eating red meat:

High protein content in red meat helps repair and build body tissue as well as the production of antibodies that the body will use to support a healthy immune system. 
Meat is high in Iron which helps form hemoglobin that transports oxygen to the body, Zinc that helps in tissue formation and metabolism, magnesium and selenium that breaks down the fats and chemicals in the body. Red meat is also high in Vitamin A, B, and D which promotes good vision, stronger teeth, bones and skin health.

This is one of my favorite dishes to make for dinner parties and fun gatherings that most everyone will love. It's a full flavored healthy version of everyone's favorite guilty pleasure... ribs!  I hope you all enjoy it!
